A recipe developer has declared that the humble beans on toast can be elevated with just two cupboard staples: peanut butter and curry powder. Georgia Hughes, who shared her recipe on the Channel 4 Served TikTok, calls it a "proper comfort food upgrade" that gives the classic dish a "glow up".
"These are my satay beans on toast," Hughes said. "A proper comfort food upgrade. Taking the humble bean and giving it a glow up. That is delicious."
“Recipe developer Georgia Hughes shares a satay beans on toast upgrade using peanut butter and curry powder.”
The recipe developer names beans on toast as her default meal when she cannot be bothered with much effort, describing it as a nostalgic childhood favourite. Her twist, which can be prepared in a single pan, requires little more than a spoonful of peanut butter and some curry powder.
"It's still the same comfort food, just a little bit elevated... Simple, comforting and delicious," she said.
To replicate the dish at home, heat a drizzle of olive oil in a pan over medium heat. Add two diced shallots and cook for six minutes until softened. Stir in one tablespoon of tomato paste and one teaspoon of curry powder, cooking for one to two minutes. Then add one tin of butter beans – if using tinned beans, drain and rinse them first, and add two tablespoons of water. If using jarred beans, add them with their brine instead. Stir in one tablespoon of peanut butter, one teaspoon of soy sauce, the juice of half a lime, and one tablespoon of honey, and simmer for a few minutes. Spoon over two slices of buttered toast and top with peanuts, pickled onions and spring onions.
In the comments, one fan wrote: "Love satay, love beans on toast, this is a must try and I can see it being just as popular as smashed avocado on toast is!" The Served account replied: "It's SUCH a good combo."
Hughes's recipe offers a simple way to jazz up a classic comfort meal – using ingredients already likely in the kitchen.
